  • 4 cups Bambara nut flour (Okpa flour)
  • 1 and half cup of palm oil
  • 2 teaspoons salt
  • 1 teaspoon Uziza powder (optional)
  • Habanero or chile Pepper to taste
  • 6–8 cups of warm water
  • Banana leaves or food-grade nylon for packaging

Step-by-Step Cooking Instruction

Step 1: Boil hot water and allow it to cool to the temperature that you can put your hand inside it, between hot and warm temperature. NOT LUKEWARM water. Sieve the okpa flour to remove the lumps and dirt

step 2: Pour the Okpa flour into a mixing bowl, add blended pepper, salt, uziza, red oil, add one cup of water and mix  them  thoroughly (with your hand properly wash or you can use kitchen turning stick) as if you turning semovita. Step 3: Add 2 cups of water to it and keep turning, even when the batter becomes smooth, still turn it. Okpa that is properly turned tastes better. It look malleable when cooked but the one that’s not properly turned would be  overly brittle even when it’s hot.

Step 4: Taste for salt, if the salt didn’t come out as you want, add salt to taste. Turn it very well to ensure the salt has dissolved, undissolved salt would make part  of the Okpa taste too salty.

Step 5: Check the texture of the Okpa mixture, it shouldn’t be too watery or too thick. Observe how fast it goes down from your hand or the turning stick, it shouldn’t be be fast or slow. See the attached pictures below it will help you to know the moderate mixture needed for your Okpa. At any time you add water or salt, stir it very very well for it to mix properly with the okpa.

Step 6: With measuring cup and food-grade nylon, scoop the desired quantity into the nylon and tie it, keep it in a bowl, continue scooping and tying until it finishes.

Step 7: For the four cups of okpa we mixed, boil 3 cups of water in a cooking pot, the okpa should not be totally submerged in the water, while the water is boiling, start adding the Okpa one after the other into the pot. Note: as you pick each nylon of okpa, look underneath the nylon you would notice some settled whitish properties, shake the nylon so that it will mix very well before putting it inside the boiling pot.

Step 8: Cover the pot tightly or you can use rice bag or any other bag to cover the okpa inside the pot before finally covering it with the pot cover. This is to conserve the heat/steam to ensure even cooking. Allow it to cook for 45mins.

Step 9: To check for proper cooking, insert a kitchen knife inside one okpa, bring it out and check if there is paste-like residue on the knife or if its dry. Paste-like residue means not yet cooked well while dry surface means well cook. Or bring out one okpa, put it in a plate and dissect it. If the middle is dry, that means its done but is there’s soft okpa paste in the middle, it means it hasn’t cooked well. Allow it to cook for another 10-15mins. But 45mins is the actual timing for the cooking.
