How to Cook Corn with Ube (African Pear): A Delicious Nigerian Snack

fresh-corn-with-pear

Cooked corn with Ube, also known as African pear, is one of the delicious traditional snacks enjoyed in Nigeria, especially in southeastern Nigeria. It is a simple seasonal delicacy made with fresh corn and African pear. The combination is particularly enjoyable when the corn is soft and the Ube has that lovely buttery texture.

Growing up, corn and Ube have always been a special combination for many of us. Although you can enjoy corn with coconut, I personally prefer mine with Ube. The taste is simply out of this world!

If you have never tried this combination, you are missing out on something delicious. Let me show you how I prepare my cooked corn with Ube, including a little trick that helps soften the African pear without making it lose its natural buttery texture.

Ingredients for Cooking Corn with Ube

You will need:

  • Fresh corn (as many as you want)
  • Fresh Ube (African pear)
  • Water
  • Salt

How to Choose Fresh Corn

The first step to enjoying delicious cooked corn is choosing fresh corn.

If you are a farmer, you can harvest fresh corn directly from your farm. Otherwise, you can buy fresh corn from the market or grocery stores, depending on your location.

Fresh corn usually has soft, green husks. You can buy corn with the husks already removed or remove them yourself when you get home.

There are several ways to identify fresh corn, including checking the colour and freshness of the husks. Fresh corn should look healthy and feel firm but tender when gently pressed.

Another important thing to consider is the maturity of the corn. Soft, tender corn cooks faster than mature, hard corn.

How to Cook Fresh Corn

Step 1: Prepare the corn

Remove the husks if they are still attached to the corn. Arrange the corn neatly in a clean cooking pot.

Step 2: Add water

Pour enough water into the pot to cover the corn completely. The corn should be submerged in water to allow it to cook properly.

Step 3: Cover and cook

Cover the pot. For better heat conservation, you can place a clean, food-safe covering over the corn before putting on the pot lid.

Allow the corn to cook for approximately 40–45 minutes.

However, the cooking time depends on the maturity and softness of the corn. Tender corn cooks faster, while mature and harder corn takes longer.

If you are using a pressure pot, the cooking time will be shorter.

Step 4: Check for doneness

After about 40 minutes, open the pot and add salt and cook again for 5mins  then bring out one corn and carefully remove a kernel or two. Allow it to cool slightly before tasting.

If the corn is soft enough to chew comfortably, it is ready. Otherwise, allow it to cook for a few more minutes.

Once cooked, turn off the heat and drain the hot water.

How to Soften Ube (African Pear) Using Hot Corn Water

This is my little trick for enjoying corn with Ube!

A few minutes before the corn is ready, wash your Ube thoroughly and put it in a clean bowl.

Once the corn is cooked, drain the hot water directly into the bowl containing the Ube. Cover the bowl and allow the Ube to sit in the hot water for just 10 seconds.

Please don’t leave it in the hot water for too long. The aim is to soften the Ube moderately without making it crack and overly soft.

Over-softening and cracking can make the African pear lose its lovely buttery texture and taste.

After 10 seconds, quickly drain the hot water. Sprinkle a pinch of salt over the Ube and cover the bowl again to allow it to soften moderately.

Remember to do this quickly while the water is still very hot. If the temperature drops too much, the Ube may not soften as expected.

When properly softened, the Ube should have that lovely buttery texture that makes eating it with cooked corn so enjoyable.

How to Enjoy Cooked Corn with Ube

Serve your freshly cooked corn with the softened Ube while still warm or hot, i personally prefer it hot.

You can eat them together by taking a bite of corn followed by a bite of Ube. The natural sweetness of the corn and the rich, buttery taste of the African pear make a wonderful combination.

You can also enjoy cooked corn with coconut instead of Ube. Both combinations are delicious, but I personally enjoy mine with Ube.

If you love the buttery texture of African pear, you will understand exactly what I mean!

Honestly, when you get soft corn and properly softened Ube, you may find yourself eating until your belly is full. That’s how much I enjoy this combination!

How to Roast Corn Without a Traditional Nigerian Kitchen Fireplace

Apart from boiling corn, you can also enjoy roasted corn.

Traditionally, corn is roasted over a native kitchen fire or open hot charcoal fire. However, if you don’t have access to this type of cooking setup, you can use an oven or air fryer.

To roast corn in an air fryer:

  1. Remove the husks from the corn.
  2. Arrange the corn inside the air fryer basket.
  3. Set the air fryer and allow the corn to roast.
  4. Keep checking the corn through the air fryer window, if available.
  5. Turn the corn from time to time to ensure it roasts evenly without burning.
  6. Continue roasting until the corn is properly cooked and has an evenly roasted appearance.

Cooking time will depend on the size of the corn and the temperature of your appliance, so keep an eye on it.

You can also use an oven following a similar method.

Final Thoughts

Cooked corn with Ube is one of those simple Nigerian snacks that brings so much enjoyment. You don’t need many ingredients or complicated cooking techniques to prepare it.

All you need is fresh corn, good-quality African pear, water and a little salt.

My personal recommendation is to enjoy your corn with Ube rather than coconut if you want to experience the buttery taste I have described. Just remember not to leave the Ube in the hot corn water for too long.

Give this combination a try, and you may discover a new favourite way to enjoy fresh corn!
